I'm as lazy as the next person. I'm most often too tired or cranky to cook myself dinner after I feed the four legged furry beasts that wind around my legs when I come home. However, I like to eat good food now and again and so, I cook. Anyone who makes fun of my recipes is doomed to a future of deep fried twinkies and Star Trek. Tonight's dinner was chicken vegetable soup.
Sweat one chopped large onion, one diced large carrot, two or three chopped celery stalks in olive oil. Add four, five, or six cloves of garlic. Feel free to add more. Season with salt and pepper. In a separate pot, boil 1.5 pounds boneless chicken. You could also used chicken thighs on the bone (very tasty) but will need a larger quantity. Season water with lots of your favorite herbs and a bay leaf. (Er, before chicken goes in. Afterwards, it would be pointless.) Pull out chicken when it is mostly cooked and chop into pieces of a size you like. Put chicken in pot with vegetables. Add water to just about cover. (At least, if you're like me and accidentally oversalted the vegetables because you were playing with the large grain sea salt.) Otherwise, add low sodium chicken stock to cover. Add whatever other vegetables you like. I used broccoli today. I also like turnip. Be careful with hard vegetables like potatos as they take a long time to cook. Sweet potatos do not work. Add a handful of chopped parsley and simmer for a while. and done. Its also good with a few squeezes of lemon or lime or some freshly grated ginger. Enjoy with a fresh piece of sourdough from your favorite bakery.
This makes about 8 cups of soup. Soup for breakfast!
